Intramuros se encuentra el restaurante objeto de esta crónica, en el que es ostensible la impronta del afamado empresario de hostelerÃa Adolfo Muñoz, empezando por su denominación (cumplido hacia su lugar de nacimiento) y continuando por la selección de personal y puesta en escena del comedor. En la jefatura de cocina, Jorge de Arce, quien, tras el obligado periodo de reclutamiento en la casa, dispone de licencia y plenos poderes para dar rienda suelta a un convincente repertorio de recetas con trazas académicas y nada capciosas, que se pueden ejemplificar en cuatro de ellas: crema de patata, yema de huevo, bacalao y migas castellanas; secreto de cerdo ibérico, papada, pisto y jugo de rabo de toro; raviol de canguro, cigala salteada y crema de azafrán; lomo de ciervo con crema de patata ahumada y tofee de berenjena. Del refinado comedor (presten atención a su artesonado) y de la estimulante bodega se ocupa Óscar Riaguas, otro discÃpulo aventajado de grupo Adolfiano.

This site seems to recieve a good ammount of visitors. How do you promote it? It offers a nice unique spin on things. I guess having something useful or substantial to post about is the most important thing.
